Favourite Pfeffernusse Recipe
Pfeffernusse originated in Germany. A traditional Pfeffernusse cookie is too hard to eat without dipping in liquid for the first few days. The Pfeffernusse cookies become soften with age. |

All Purpose Flour | 2 Cups |
White Sugar | 1/3 Cup |
Butter | 3/4 Cup |
Molasses | 3/4 Cup |
Egg | 1 |
Baking Powder | ½ Tsp. |
Cinnamon Powder | 2 Tsp. |
Nutmeg Powder | ½ Tsp. |
Clove Powder | ¼ Tsp. |
Ginger ground | 1 Tsp. |
Black Pepper Powder | 1/8 Tsp. |
Salt | 1/8 Tsp. |
Fruit Sugar (Fructose) | 1/3 Cup |

PREPARATION:
Tools: Oven, Beater, A large mixing bowl, Shallow dish, a large saucepan, sifter, Cookie sheets, melon baller (optional)
1. Take a shallow dish and sift in the dry ingredients except fruit sugar 2 times with the help of a sifter.
2. In a large saucepan, combine molasses and butter. Heat and
stir it until butter melts. Transfer it to a big mixing bowl and let it
cool to room temperature.
3. Stir in egg to the molasses mixture and blend it well with the help of the beater.
4. Now fold in flour mixture to the molasses batter little by
little and blend it well with hard wooden spatula. The dough will be
stiff by this time. Keep it aside for at least ½ an hour.
5. Meanwhile preheat the oven to 190 degrees C.
6. Grease the cookie sheet and keep it aside.
7. Now take the cookie dough and roll into balls with the help
of a melon baller to make equal size of cookies; and place it 2 inch
apart on the greased cookie sheet.
8. Bake it into the preheated oven for 10- 12 minutes.
9. Once cookies are baked take it out and let it cool for 2 min such that it should not cool completely.
10. In a shallow dish take fruit sugar and roll the cookies in fruit sugar while warm.
11. Store these delicious Pfeffernusse Cookies in an air tight jar.
